Before I transitioned from a vegetarian to a plant-based way of eating, I was an all pasta kinda girl. I made and ate mac ‘n’ cheese, macaroni pie, fettuccine alfredo, spaghetti with tomato sauce and basically any variation of pasta.
Ever since I cut out all animal products from my diet, it has forced me to become more creative in the kitchen. I went from eating the same pasta dishes anytime I cooked to coming up with a new dish almost every week.
I just came up with this amazing vegetable coconut curry and I’m obsessed! It’s so creamy and full of flavour that I knew I had to share this recipe.
The amazing thing about this dish is the fact that it’s completely oil-free! I’ve been trying to reduce the amount of oil I use, so I was pleasantly surprised that this turned out so good without the need for oil of any kind.
INGREDIENTS
- 1/4 White Onion, Sliced
- 3 tbsp Whole Wheat Flour
- 1 cup Broccoli Florets
- 1 Carrot, Chopped
- 1 cup Red Cabbage, Chopped
- 1/3 cup Whole Kernel Corn
- 1 tin Coconut Milk
- 1 1/2 tbsp Curry Powder
- 1 tbsp Garlic Powder
- 1 tbsp Paprika
- 1/2 tbsp Cumin
- 1/2 tbsp Coriander
- 1/2 tbsp Tumeric
- Salt & Pepper to Taste
- Cooked Rice
METHOD
- Start by heating up a splash of water in a pan, and once hot, add your sliced onion. Stir until tender.
- Sprinkle in your whole wheat flour and whisk together to form a roux.
- Once the flour has begun to clump together and combine with the water, add your chopped broccoli, carrot, cabbage and corn.
- Gently pour in the coconut milk and stir everything to combine.
- Season well with curry, garlic, paprika, cumin, coriander, salt and pepper and continue to stir until the spices have been incorporated.
- Sprinkle in turmeric and give one final stir, then leave to simmer for 20 to 30 minutes, or until vegetables are tender.
- Serve next to or over rice.
… and that’s it! I’m so happy with how this dish turned out. I got to use so many of my favourite vegetables in one delicious and extremely flavourful meal that I can’t wait to make again!
