Delicious & Creamy Vegan Fettuccine Alfredo

When I decided to go vegan a couple of months ago, I knew that one of the dishes I’d desperately miss was fettuccine Alfredo. It’s such a comfort food for my family, that I knew that I had to try to veganize it, so it could still be enjoyed on my plant-based journey.

I’ve tried many different recipes using nutritional yeast for a cheesy flavour, almond milk and flour, and so many more, and while they weren’t bad recipes, they definitely weren’t comparable to the real deal.

Then, I thought about making it with coconut milk. I had bought my first tin of the milk hoping to use it for some kind of curry, but then I had the brilliant idea to make an Alfredo sauce. It was thick and creamy – everything I needed to make a great Alfredo sauce. That’s definitely one of the best decisions I’ve ever made, because this sauce tastes almost exactly like the real deal and the best part? It’s non-vegan approved!

This recipe is very simple to make, and every ingredient can be found in your local supermarket.

Delicious & Creamy Vegan Fettuccine Alfredo

INGREDIENTS

  • 250 grams Pre-Cooked Fettuccine (or any pasta of your choice)
  • 2 tbsp Vegetable Oil
  • 2 Garlic Cloves, Minced
  • 1 Small Onion, Chopped
  • 3 tbsp All-Purpose Flour
  • 2/3 tin Coconut Milk
  • 1 tbsp Paprika
  • 1 tbsp Garlic Powder
  • 1 tbsp Italian Herbs
  • 1/2 tbsp Chili Powder
  • Salt & Pepper to Taste
  • 1/2 cup Pasta Water

The combination of spices is completely customizable, but I’d recommend keeping the Italian herbs for an authentic flavour.

METHOD

  1. Heat vegetable oil in a deep pan.
  2. Add your minced garlic and chopped onions, and cook until tender.
  3. Sprinkle in the all-purpose flour and whisk together along with the garlic and onion to form a roux.
  4. Once thoroughly combined, slowly pour coconut milk into the roux and whisk to combine all ingredients.
  5. Let simmer for 5 minutes.
  6. Add your spices to the sauce and continue whisking to combine.
  7. To thin out the sauce, add leftover pasta water and whisk together.
  8. Once the sauce has simmered for 2 more minutes, add pre-cooked pasta to the pan, and turn through to coat with the sauce.

… and that’s it! You have a rich, creamy pasta dish that everyone will love! Sometimes I can’t even believe that this meal is vegan! I like to serve this creamy and delicious pasta with a side of steamed vegetables and a sprinkle of chili powder to perfectly finish it off.
